Its Tuesday guys, be happy! Tuesday means Taco Tuesday! I don’t know about you but we just can’t get enough tacos, burritos, quesadillas, and the best part, Margaritas! We’ve come up with a delicious Taco Tuesday recipe for the perfect celebration at home.

Grilled Corn, Mushroom + Roasted Poblano Tacos

serves 4

5 large ears of sweet corn, grilled and cut off the cob

2 large poblano peppers

2 cups sliced cremini mushrooms

1/2 teaspoon olive oil

1 1/2 tablespoons unsalted butter

1/2 teaspoon salt

1/2 teaspoon pepper

1 large avocado, thinly sliced

4 ounces monterey jack cheese, freshly grated

8-10 small corn tortillas, warmed

New Recipes: Turkey

Spagetti Squash Boats

These puppies are perfect for everyone sitting at the table! What could be better than a simple-to-make, delicious, and pretty healthy meal for your next dinner?

What you’ll need:

  • 2 medium spaghetti squash
  • 2 tbsp olive oil, divided
  • salt and pepper
  • 1 onion, chopped
  • 4 cloves garlic, chopped
  • 20 oz ground turkey breast
  • 1 28oz can crushed tomatoes
  • 1 tsp dried oregano
  • 1 tsp fresh or dried basil
  • 2 tsp crushed red pepper
  • 1 cup skim mozzarella cheese

How to:

  1. Preheat oven to 400. Cut the squash in half  lengthwise. Scoop out all the guts! Rub a little olive oil on there.(about 2 tablespoons). Place the squash halves face down on a baking sheet. Bake those puppies for about 40-60 minutes. The squash should be a little squishing and should easily pull apart.
  2. Over medium heat, toss in a little olive oil, onions, and garlic. Let that saute until fragrant. Add ground turkey. Sprinkle salt and pepper on it to add some flavor. Cook until turkey is fully brown. Add crushed tomato, basil, and oregano to the pan. When sauce starts to bubble, reduce heat to a simmer. Let all that simmer until thickened (about 3-4 minutes).
  3. Flip cooked squash over on the baking sheet so the skin side is facing down. Pour that delicious sauce into the center of each squash half. Top each “boat” with 1/4 cup cheese. Turn oven to broil, and cook for an other 2 minutes until cheese is melted and slightly bubbling. Keep your eye on it so as not to burn it.
  4. Enjoy each and every bite!!!

Foodie Fridays– 4th of July Edition

Red, White, and Blue Shooter

Veggie Pigs in a Blanket

The 4th of July is filled with hot dogs and hamburgers and anything American we can get to chop our teeth on! Well, use those leftovers we know you have and make our favorite American dish; Pigs in a Blanket perfectly paired with Red, White and Blue Shooters! Go America! Here are the most simple recipes that will surely put those leftovers to great use! Eat up!

Pigs in a Blanket

1) Veggie sausages (for all you meat eaters use mini Frankfurters)

2) Crescent Dough

3) Cream Cheese (optional)

Preheat oven to 350 degrees. Cut each triangle of crescent dough into thirds. Spread thin layer of cream cheese on dough. Put mini hot dogs one end of dough and roll it up! Bake for 12-15 min. It’s that easy!

Red White and Blue Shooter

1) Grenadine

2) Peach Schnapps

3) Blue Curacao

In a two ounce shooter glass layer first Grenadine, then Peach Schnapps, and finally Blue Curacao. And Enjoy!
